See alumine on püülileib, ta sai sisse tumedat suhkrusiirupit ja köömneid ja sellest tainast mis järgi jäi, tegin kaapekaku, vanaema maitses toda ja ütles et see on nüüd ikka päriselt kohe leib. Ta tuli siuke hästi pehme ja kohev ja mõnus, köömnemaitse tugevalt sees. Suurt põle lahti lõigand veel. Kui üleeelmised olid laulupeoleivad siis nüüd on Folgileivad, viin Viljandi ja seal sööme kolmekeiste ( tant, mia ja imä ehk tädi, mina ja ema).
Kaapekakk vist on tänapäeval üsna väljasurd asi, aga kui omal nahal tunda, kui raske töö on leivataigna tegemine, siis tõesti ei raatsi üht kuivand kübetki taignakausist kraani all maha pesta. Ja nii ma siis kraapisid ja urgitsesin.
Tavalisest sõmerast rukkijahust leib on seekord seene [kastmega], Balti jaaama turult ostsin mingi 1 kroonise kastmepaki kus on 12 % kuivatatud seent! Puljongikuubikus on aint 0,2. Parem oleks muidugi kuivatatud seen naturaalselt aga seda pole hetkel võtta sest tiblad pole veel tatikaid korjanud.
The round one is a sourbread out of fine rye flour that had to get a splash of hot water on the flour to get started. And oh boy did it get started! I was the breads´ slave yesterday. I couldnt do anything but beat it and watch it. It was rising like Mississippi during the rains. But thanks to that it became softer and more, you know, like a sponge.... and it has a soft crust not like the previous ones. The dough went really sour and there was a lot of it. So I made a little "scratch-cake" thats made of dough leftovers over here....well, used to be made at old days, I suppose now it gets just washed away. People waste dough. But think how much work and sweat is put into that stuff, it is insane just to wash a bowl when there is still something to scratch off.
The square one is made with an odd combo of mushroom sauce and dates. I think they are a good match cause both sort of have an edgy taste. Dates aren´t sweet, it would have been disgusting to make it with raisins like a fruti cake. But I think dates work out well.
Iga kord paremini! Ema ütleb, et must oleks vabalt võinud pagar saada. Noh, misiganes. See lihtsalt pakub rahuldust. Eesti leib on eriline. See hapu leib. Igaüks peaks selle korralikult käppa saama, iga eestlane. See on MEIE oskus. Teised tehku pärmiga ja nösserdagu oma keekse (vt lihtsad leivad, no mis leivad? Koogid on nood...)
Better every time. It is satisfying just MAKING them. I have adopted an attitude that it CAN go wrong if it must, which gives me the necessary calm while baking, and I think thats the key - if I worried about how they are going to turn out, I would get forgetful and rush things so that it really would turn things into a little disaster.
Millest leivategija unistab...kindlasti mitte leivaküpsetusmasinast. Käsitsi on mõnusam. Võibolla ühest hääst tõrrest...eraldi jahunõudest... Ruumipuudust ei ole, sest seda tööd tehakse peaga ja südamega, ning neis on ruumi maa ja ilm.
What does a bread maker dream of? Not a bread baking machine, no way. A wooden bowl, a huge one... for 7 -8 kg of dough. Nice flour jars... No need for extra space, it is all in the mind and heart where the bread is made. No matter how narrow that kitchen is.
